An ancient Ligurian tradition
U Turun is a project by Chef Cosimo Bunicelli who, after more than a year of research, has produced the recipe that reproduces an ancient Ligurian tradition forgotten, that of nougat.
Since joining the kitchen, Cosimo has been interested in discovering the gastronomic traditions of his territory and having learned about the existence of a Ligurian nougat he wanted to go deep to find out his origins.
A little history of nougat
The tradition of nougat in Italy has very ancient roots: from the Arab and Roman era, as evidenced by some of the writings of the era in which the ancestor of today’s nougat is mentioned: the “cuppedia”, a dessert made of hazelnuts or roasted almonds held together with caramelized sugar. In Liguria, in the rare writings of this delicacy, we talk about a very soft, fondant dough with hazelnuts (probably coming from Piedmont), honey and sugar.
The features of U Turun
Starting from these bases, Chef Bunicelli started experimenting to reproduce that recipe of ancient books. U Turun has a unique consistency, the dough of albums, sugar, and honey melts in the mouth and roasted hazelnuts give a crisp note and an explosion of utterly unforgettable taste.

The best hazelnuts in the world – U Turun is composed of about half by Hazelnuts Round Trilobata of Langhe IGP, a big name for a simple concept: the best hazelnuts in the world!
Chestnut Honey at Cornoviglio – After tasting and testing with different honey, the choice is relegated to the honey of Chestnut, which with its bitter note weighs the intense sweetness of the nougat. In particular, the honey produced at Calice al Cornoviglio is distinguished by its purity and a bitter note not overly intense that marries beautifully with hazelnuts.
Natural outdoor breeding eggs – Eggs used for the production of U Turun are produced on the spot by the family business (Az.Agr. Bunicelli), from hens grown outdoors and feeding on totally natural products.
